Storefront Report: Seasonal cuisine coming to Eagle Rock

Corey Wilton of the upcoming Four Cafe in Eagle Rock was celebrating Wednesday after inspectors signed off on some major permits and a crew showed up to install and illuminate the cafe sign. Wilton and his wife, Michelle, a chef and co-owner, said they came upon the former Coldwell Banker office in the 2100 block of Colorado Boulevard last March as they searched for a place to open a cafe in Eagle Rock, where they both reside. “We fell in love with it,” he said.

Wilton said the cafe, which will include table service and to-go meals, will feature a seasonal and farmer’s market inspired menu. The cafe will seat 30 people and customers will be able to order food online and pick it up at the curb, Wilton said.

The goal is finish by early next month as Wilton and workers race to finish the space. One item that needs attending is that newly installed sign. The letter “o” is missing a piece. “No problem, Wilton was told. “They are going to bring me a new ‘o’ tomorrow.”
