Former fitness center would be converted to restaurant space if city agrees

EAGLE ROCK — A former fitness center could be transformed into the newest place to eat on Colorado Boulevard.

The city Planning Department has received an application to allow the former Extreme Training Center at the northeast corner of Colorado and Caspar Avenue to be as a restaurant. Applicant Jackie Siegel of Colorado Corner LLC also plans to change the storefront window and doorway.

It’s not clear what type of restaurant would lease the space but a marketing flyer shows that the approximately 4,700-square-foot building could be split between two tenants.

The new restaurant space would be across the street from Camilo’s and Four restaurant and near the recently opened Turningfire Modern Rotisserie.
