Maycoll Calderón brings his Mexico City cuisine to Silver Lake

SILVER LAKE – Already a famous chef in Mexico City, Maycoll Calderón is bringing his ceviches and wood-fired fish and meats to L.A., at his new Silver Lake restaurant, Tintorera, Eater LA reports.

The Venezuelan-born chef has converted the old Cowboys & Turbans space on Sunset Boulevard into an almost all-outdoor venue that helps push  local Mexican cuisine beyond tacos and burritos.

The son of a sculptor, Calderón made his way up to the position of executive chef at the St. Regis Bahia Beach Resort in Puerto Rico. Since then, he has been director and executive chef at J&G Grill and opened his own wildly popular restaurant, Huset Cocina de Campo – both in Mexico City.

Aside from seafood, Tintorera has an indoor speakeasy featuring a craft cocktail menu from Mexico City bartender David Mora. The restaurant is open on a limited basis, accepting reservations by email. Tintorera is located in the 2800 block of Sunset Boulevard in Silver Lake.
