SILVER LAKE — Two local chefs have joined forces to create a plant-based pop-up at Millie’s Café in Silver Lake.
Chefs Greg Arnold, who has worked at Sage Vegan Bistro, and Dave Martinez, who has worked at Elf Café, are behind the new concept called Of Aire.
“The owner of Millie’s called me out of the blue and asked if I wanted to come in on the weekends and do anything I wanted,” said Arnold. “I called Dave and we spent about 10 days working on the menu and just opened.”
The concept of the menu is “Ancient Modern.” The chefs create classic versions of summer dishes re-invented with modern ingredients, like sea vegetables, tonic herbs and medicinal plants. They get most of their produce from the Echo Park and Santa Monica farmers markets.
They serve mostly vegan food (but there are a few meat options) and they operate Thursdays through Saturdays from 6 pm to 10 pm. Want some wine to pair with your dinner? No problem. It’s BYOB without a corkage fee.
“It’s super casual, more like a party at a friends place with two chefs cooking for you and chatting you up as we are all jamming to Hendrix,” says Martinez.
Arnold and Martinez don’t have any long term plans for their pop-up. The chefs plan to continue as long as it’s fun for them and their guests.
