SILVER LAKE – This is why we have fusion cuisine – so we can experience a Filipino spin on a French Christmas cake.
Los Angeles Magazine reports that Kristine de la Cruz, pastry chef at FrankieLucy Bakeshop, is doing her own take on the classic Bûche de Noël. Usually, this is a sponge cake rolled up with frosting into the form of a yule log. Then sometimes, to make it look more like a real tree log, a chef might add decorations, such as meringue or marzipan in the shape of mushrooms.
But in de la Cruz’s version, the cake is infused with ube – a yam that often featured in Filipino desserts. This yule log, as a result, is purple. The filling has macapuno cream cheese, and the topping is coconut buttercream.
The cake is available by special order. FrankieLucy Bakeshop is at 3116 1/2 Sunset Boulevard in Silver Lake.
